Treasured "Heals All Waffles"

 


Is there anything more comforting than fresh golden waffles? Ok maybe there is to you but the comfort and nourishment these waffles bring me and others is truly something special that I would like to share.

The simple act of making and preparing the recipe below shows its intention. You can change the "me" to "you" or "us" and have the same results every time.



Here is the recipe incantation:

" Flour to sustain me, 

Sugar to sweeten me, 

Baking Powder to help me rise, 

Salt to protect me."

1 1/2 cups of all purpose flour

2 tbsp sugar (white, brown or honey)

2 tsp baking powder

A pinch of salt

1 egg (you can use egg substitute)

1 cup of milk (any kind or yogurt)

2 tbsp Melted butter or vegetable oil

* at times of a need for a little extra comfort or protection I add vanilla 1 tsp and a dash of cinnamon


Mix the first four ingredients in a bowl while saying the about incantation, mix together with a spatula or spoon of your choice, make a well in the center and add the remaining ingredients. *Depending on how thick you like your batter you may wish to add a bit more liquid, sometimes I don't add exact amounts and I use intuition I find adding the liquid until "my ancestors tell me enough" works as well enough for me. If you are less adventurous, stick to the measured amounts. 



You can double and triple the recipe. You can mix the four ingredients and place in a jar to give as a gift, sometimes I even gift it in a zip lock bag, because lets face it I hate parting with jars.



Heat your waffle Iron and place your desired amount into your waffle maker and cook to your waffle iron specifications.

When I gift this I usually include especially for younger adults, friends and children their own tiny waffle iron. I have lost track of how many Dash Mini Waffle Irons I have bought from a store here called London Drugs, I own two for myself one black and one white one. I love the fun patterns and shapes they have like hearts, a skull, honey comb and even the traditional waffle style. they have lots of colors as well. I am on the hunt for the Snowflake one this year! 





You can find these easy on Amazon, they are under $20 here in Canada and even our book store called Indigo carries them. 

I find that in these times of conflict, pandemic, anxiety and depression, isolation and even just a traditional bad day, there is nothing more comforting than making yourself or gifting a friend the simple comfort that waffles can bring. 

As I made these the other night, I decided to serve with this lovely tea I found from Twining's London, it is Chamomile, Honey and Vanilla. I really enjoy this tea hot but it is also lovely cold.
Incase you are curious the pattern I used is called Silver Birch it is Royal Albert, and one that I also lovingly refer to as my "midlife crisis" china, it is the third set I own in many pieces. Most of my tea cups are stand a lone sets but this is one of my most favorite sets.
